Seasoning: Many of the granite models require seasoning before first use, which involves grinding white rice to a powder, and then grinding garlic cloves with a mix of seasoning such as salt, cumin, coriander and pepper. Seasoning helps remove any stone or grit particles from the porous surface so that it doesn't release any into your food when you first use it.
